Conkie/Konkee is a sweet pudding steamed in banana leaves. Made primarily of cornmeal and pumpkin and flavoured with spices, Conkie gets is colour from the deep, rich, sweet, orange-flesh pumpkin (known as Calabaza or simply West Indian pumpkin). This is quite a treat; it takes hand-grating of the ingredients to give the desired smooth texture to the pudding when steamed.
