Guyana @ 50 - Salt Fish

Salt fish is an ingredient found throughout the Caribbean. Its availability and use go back to the days of colonial rule. Fried "sautéed" is one of the more popular ways in which it is prepared. Cooked this way, the salt fish is mostly eaten with bakes (fried dough), ground provisions, plain rice or rice and peas. Each household also has its own way of preparing this dish, some like it with a gravy/sauce.
