This cookie ain't gonna crumble. This cookie ain't hard or crisp. This cookie is soft and chewy. Plumbed up with a generous helping of rum-swollen raisins, this cookie makes you think you are having a delightful taste Caribbean Christmas cake.

Look at the cookies - they look as if there's chocolate in the mixture right? Nope.That rich dark colour and flavour is from West Indian molasses made from sugar cane. You won't get the same results using molasses made from beet juice or burnt sugar.
