In exactly a week from today (Tuesday), it will be Pancake Day, aka Shrove Tuesday. Though we enjoy all types of pancakes throughout the year, people tend to revert to their traditional pancakes on Pancake Day. It's what I do too. I would experiment the week before with some other type of pancake but when the day rolls around, I head to my recipe of Guyanese pancakes, an adaptation of the Portuguese Malasadas.

You can make the regular pancakes in a mini version as well. Same recipe as above just make them smaller.
