I am alwauys looking for ways to cook plantains. I had always thought you needed to double fry and flatten them but am open to all great ideas.

Goodness, these sound so good. Wonder if using Costa Rica bananas and Swiss bacon would yield a similar result.

I did it! But with the usual bananas and I did not achieve burnt spots. Other half liked it very much, too. :) Thank you!
I also tried for the first time caramelised bacon: bacon rashers laid out with a thin layer of brown sugar on top. Start from a cold oven till 170 degrees C. Watch out from the 16th minute, to make sure it's not too brown. Remove from oven, drain on kitchen paper and sprinkle with a bit of sea salt if desired. Heaven! (If you start to feel a sore throat coming on, quickly drink chamomile tea.)
I'm always looking for things to do with plantains, to take them outside the traditional box. This is a supreme idea. Thanks
