It's all about The Sides

>> Saturday, 5 December 2009

They can make or break a meal. Very often, they are the most memorable things about a meal; without them, let’s just say that your meal will be average. The entrees will just sit there alone. Lonely. Side dishes are headliners in their own right. Click here for this week's column and recipes to the two potato sides dishes featured: Duchess Potatoes (Pommes Duchesse) and Potatoes Anna (Pommes Anna).

Check out Susan's and Jackie's Duchess Potatoes as well.

Here's another dish that's great for all meat and potatoes lovers, Potatoes Anna! Use a mandoline or your food processor fitted with a slicer.

A cast iron skillet makes excellent work of this but you can definitely use a pie plate. Oh the baked brown bottom is simply outstanding. You'll be saving that for last so that you can savour it.

Remember that you can get both recipes in the column. Click here.

you're so right, side dishes play an important role for the success of a meal!!! potatoe based dishes are mostly loved by all, elders and kids.. both of them sound simple and delicious; the " pommes duchesse " is my favourite, I add more eggs 2 or 3 egg yolks + 2 whole eggs, to the preparation!! nice recipes!!

Cynthia! I made your duchess potatoes. They are amazing!! And such a lovely grand presentation as well. it really escalated my table to ELEGANT compared to the informal meals I dole out. I LOVE them! I added some sour cream to them and some dried chopped herbs as well for a speck of color. I would truly love to add this to my recipe collection on my blog at a later time if you don't mind....

Sylvia July 03, 2010 1:08 PM

Your pictures are amazing. My stomach is growling right now! I think the bottom is going to be the best part.. and I'm using a pie plate because I don't have a cast iron skillet, but I'm sure it will turn out fine. YUM!
