The white fleshed sweet potato is what we commonmy find in India. I was surprise when I ahs the orange fleshed ones here. I feel, the white fleshed ones aren't as sweet at the orange fleshed ones.

I'd always thought of sweet potatoes as the "other potato"! I like sweet potato fries, so I think I'll like your oven roasted recipe. By the way...LOVED your guest post on rasa malaysia!

Delicious. I found these for the first time a few weeks ago and made chips with them. They taste like a cross between plantains and Idahos. We loved them. Would love your recipes, too.

I've never liked these, because they aren't as sweet or gorgeously colored as yams, but treating them like a regular white potato is a really good idea. They probably would be great mashed. I have to try that!

I am guilty of overlooking the white sweet potato in favour of his yellow 'cousin'....you have made me rethink my predjudice. That mahi mahi dish OMG! And the name of your restaurant where it will be served please?!

This topic about sweet potatoes made me nostalgic..mouth watering sweet potato dishes.......
I'm familiar with the white fleshed ones....We usually eat them boiled and also the ones cooked(grilled i would say) on hot coal with out flame(should cook with peel on and remove peel before eating).

I am shocked ppl said that this white fleshed one is not as sweet as the orange variety. I find them too sweet actually. I wished they could be a little milder in taste.Also they hold up better. When you fry the orange ones it reminds me of frying pumpkin! You forgot the way that the Bajans eat it on Sundays. Baked and peel off the skin with a hint of butter.These photos are amazing.

Even though i find plenty of sweet potatoes where I live, I hardly ever buy them 'coz of the sweet taste. Your oven roasted version is tempting me into breaking out of that habit, though....

Aww the shot with potato and pan seared mahi mahi made me drool! Lovely sweet potato dishes! Oh but I never thought the white fleshed ones were sweet potato coz in my grocery store they are labelled as Yam. Or is Yam another name for sweet potato?

Cynthia I have been crazy about these potatoes for weeks!

I first tried them some time ago but have only just started to use them again - this is because you can't buy them everywhere here.

seems that sweet potato fries is the new hit in Canada.. one of the best fish and chips joints (by "their" account) serves those wedges of fried sweet potato, dusted with some sort of seasoning. Still have to try it.

BTW the light purple colour (flesh) sweet potato we get in the Caribbean is probably the sweetest you'll ever eat.

I love sweet potato but i find those sold here a bit mushy. Even when i broiled in the oven they are still too mushy. Do you have this problem?

I adore sweet potatoes. The man I'm with does not. In fact, absolutely cannot eat them.

I love sweet potatoes. Reminds me of my grand dad who roasted it on a charcoal roaster sorta thingy used to roast coffee beans and force feeding us :D
