Party Time!


Parmesan Crisps

You will not believe how easy these crisps are to make and you can see how attractive they are! :) From now on, this is going to be a staple appetizer whenever I entertain. The great thing also, is that they can be served in a basket made from the same ingredient!

This is my entry to Meeta's Birthday Party Bang!

Recipe - Parmesan Crisps

Ingredients

  • 1 cup grated Parmesan cheese, divided
  • A few grinds of black pepper
Hardware

  • A large baking sheet
  • Parchment paper or a silpat (silicone baking mat) if you have one
  • A small bowl turned upside down to work as a mold
Method

  1. Preheat oven to 400 degree
  2. Mix cheese and black pepper
To make basket:

  1. Take 1/2 cup of mixture and spread it in a thin circle
  2. Bake it for 5 - 7 mins
  3. Remove round disk and drape over the bottom of the bowl, gently pressing against the sides of the bowl
  4. Leave to cool and harden
To make crisps:

  1. Spoon 1/2 tbsp of cheese onto baking sheet 1-inch apart
  2. Flatten the top of the cheese a little with the back of your spoon
  3. Bake in oven for 3 - 5 mins
  4. Remove from oven and let cool
  5. Place in Parmesan basket, garnish with chives and serve
Notes:

  • You can vary the size of the crisps to suit your needs for example to 1 tbsp or 1 tsp.
  • You do not have to make a molded basket to serve the crisps, they can be served using a plate, bowl or platter
  • Finely snipped chives can be added to the cheese mixture and be baked right into the crisp

My daughter LOVES cheese. Can this recipe be used with other types of cheese? If so, what kinds? We don't always get all types of cheese here and the Parmesan we get is usually the bottled flakes -- like you would use for sprinkling over Italian dishes.

Ahh yes, I like these!!
I turn them over on a bowl when they are still warm to make a Parmesan bowl out of them.....and I serve a Spinach-Mandarin Orange salad inside. I brought that for a fellow Nurse's baby shower last year, and they were a hit!
I'll try leaving them flat the next time, am sure it would go well with some dip and such!

Hi Cheryl - any hard cheese will do. I am not sure what is easily available there but if you are referring to the already grated parmesan cheese that's sold, that is fine. That's what I used. I did not get a chance to go down to the Italian shop and pick up a wedge so I used what I had in the fridge.

The New Zealand and English chedder cheese we get will not do the job.

Oh Suganya - that description is so vivid. Makes we want some soup right now.

Trupti - you must have been the talk of the party. I too like the idea of serving a salad in the parmesan basket. Actually, I think the next time I am entertaining, I will make mini baskets and have individual salads for everyone, that way, I won't have salad plates to clean :)

I recently saw something like these chips in one of my Swedish cooking magazines, so I went looking for that recipe. They were not made of Parmesan cheese.

I found the recipe. Here it is:
(8 chips)
2 dl (200 ml) finely grated spice cheese.
Heat a dry nonstick skillet over low heat.
For each chips: Gently put 1 tablespoon grated cheese into the skillet.
Shape into a thin round.
Allow the cheese to melt until it´s golden brown.
Remove from heat.
Allow them to stiffen a little before you remove them from the skillet.
Cool on a rack.

I suppose hard cheeses like cheddar will work fine.

Karin - the only kinds of chedder cheese that I am familiar with is the New Zealand and English cheddar, both would be much too soft for these crisps. But if there are other hard cheddar which I obviously don't know about, it will work just fine.

Thanks for the recipe you shared. For shaping, some people also drape the crisp over a rolling pin.

The world's easiest chip. I like to press a single herb leaf into each when they are just starting to melt. These look especially light and crispy. I can see that whole stack disappear but quick.

cynthia, I was reading your comment under my gooseberry post. So happy to see that you enjoyed gooseberries as a school kid too. :) And about the syrup your aunt makes, what a coincidence! my aunt used to make a syrup too. It had jaggery(indian brown sugar) in it and she used to feed all of us kids telling that it would improve our memory so we can do better in tests. Lots of memories around gooseberries, huh?

And you have asked long time ago about rasam. Rasam is a spicy indian soup normally served with rice or as a drink. You will find several versions of it in other blogs.

And do I have to say Parmesan crisps look great?
