In Guyana, I grew up eating an adaptation of these Portuguese doughnuts - Malasadas - on Shrove Tuesday (aka Pancake Day). Read about the influence here and also get the recipe. Hands down, these are THE BEST doughnuts I have ever eaten. Ever.
The dough-batter is proofed twice and develops gluten that stretches, puffs and makes these truly melt-in-the-mouth.
