Guide to Frying Ripe Plantains

Frying ripe plantains can seem an elusive task for many, particularly if you are not familiar with this vegetable/fruit. There are certain basic things that once understood will always lead to successfully frying ripe plantains. The first of course is choosing the plantain. I've prepared a guide here that I am sure you will find useful. It also discusses, the pan, the oil and heat needed to create these pleasurable bites.

I tried plantains for the first time at a Salvadorian restaurant in DC, it is nice to know how to cook them.

Beautiful!! My sister and her husband just made me the most amazing patacones (with green plantains obviously). They topped them with guacamole and salsa as a snack to have with drinks before dinner. It was amazing. We have so much catching up to do, I know. I will get in touch properly asap. I think of you all the time - just having a rather "bumpy" summer. But I love my cinnamon!!! I'm working on a post about it : )

Love your photos. We like to cube our plantains and saute them with a pinch of brown sugar (if the plantains are a little green)smoked paprika and sea salt.

The pics look yummy.. I too make fried plaintains but in a different way... I may post the recipe on my blog if I get my hands on some good ones.
