Mrs. Cummings' Swiss Roll

>> Saturday, 15 May 2010

Several years ago I happened to find myself in a pastry shop and saw that they had some perfectly sliced Swiss Rolls in their showcase. I immediately ordered not one but two slices and raced home. The setting had to be right for the feasting on the Swiss Roll - feet up, relaxed, a beverage of choice and no pressing tasks or chores at hand. I was about to take a trip back in time so it was important that I be prepared. I had to be present in the moment. I took a bite, closed my eyes and began to chew... I waited and waited and waited... Click here to read the rest of this week's column. Find out who Mrs. Cummings was and for the recipe to this most delicious Guava Jam Swiss Roll.

Have a good week everyone!

Swiss roll was one of my moms favourites. Often it was made with lemon curd or strawberry jam.

I am amazed that you are wrote about Aunt Urmia (Cummings) swiss roll. She was our neighbour and as a girl I would watch in fascination as she made the pineapple jam and the swiss roll and put it all together rolled in a damp tea towel dusted with sugar...and yes it was usually for Sacred Heart Church fair. She was a perfectionist when it came to her baking. I can still 'taste' Aunt Urmia's swiss roll and cookies. I too have tried to replicate her swiss roll, including making the pineapple jam. Thanks for the memories.

This is the kind of Swiss Roll I love - no cream!

sra May 18, 2010 1:29 PM

Sometimes the setting is so important to enjoy a treat - the other day, I opened a can of tinned fruit - I haven't ever bought it, I think - because it was approaching its expiry date and ate it at midnight in much silence in an air-conditioned room far away from the heat outside that room. Perfect!

We used to call these jam rolls - our bakery in our hometown had it and it would have grains of sugar all over it to give a slight crunch.

pigpigscorner May 18, 2010 2:49 PM

This looks amazingly soft and fluffy!

Hi Cynthia

Unfortunately I have some very sad news about Rosie from Baking Cakes Galore, she has passed away. Could you please pass by my blog. I have written up a tribute for her on my blog and would like everyone who knew her to leave a comment as I will be printing out all the comments to send onto her husband.

This swiss roll looks incredible and I love that it is with guava jam, I have guava jam right now and would love to make this dessert!

Sandy May 23, 2010 6:27 PM

My mom was a perfectionist, making many swiss rolls as we grew up. I think my favorite one though, was when she would slightly soften rainbow sherbet, and make it the filling for the swiss roll and then freeze it, dusting it with powdered sugar right before we ate. Wow, brings back so so many memories. Happy Eating.

Miri May 31, 2010 7:11 AM

Wow - that is one of the most scrumptious rolls I have ever seen - like a soft silky bolster!!
