Notes on a Chicken Salad & Guest Posting!

Over the years I’ve made quite a few chicken salads and I’ve experimented with various cooking methods as well as various parts of the chicken all in a quest to find the most effective way for the chicken to remain moist and flavourful. There's a particular cooking method I prefer coupled with a particular cut of the chicken that gives me the results and flavour I am looking for. Click here to read my Notes on a Chicken Salad. I love a good chicken salad. It's pure summer on a plate. Lately, I've been liking it especially on a good artisan roll slathered with mango chutney.

I used to work for a coffee-shop where we'd also do our own baking, salads, and sandwiches. We slow-broiled chicken for our chicken salad. The broiled chicken fell from the bone, it was so tender, and just needed to be shredded by hand. Add a bit of garlic aioli and you had chicken salad. Yum!

I love chicken salad classic and also curried chicken salad with raisins and slivered almonds and chopped apples.Yum. Homemade mayo or Hellman's. It's also delicious with mayo and fresh dill.I love your version also Cynthia.

Wow, that salad looks awesome!!

I have always roasted my chicken, but I can understand your idea of rather poaching the chicken and flavoring the broth!! I would gladly put a heap of that salad in a fresh crispy bun!!!

I enjoy chicken salad, but I was amazed to find that my favorite kinds were - bland. Adding fruits and nuts, really didn't do anything for me, but I recently made a chicken salad with shallots, curry powder and mango chutney.
It was to die for, and I was both happy and shocked. I found a keeper! Im going to have to try your chicken salad, to find two keepers in two weeks is notable!

The yogurt and mayo in the salad sure tempts me. Looks too delicious.

I like that chicken salad--too much dressing is often a problem I run into as well. Good idea to skip the celery--I love it but Tavo can not stand it at all :)

Cynthia, chuck the chicken but give me the bones;-) I do not like mayonnaise, so i always wonder what else i could use in a chicken salad.. yogurt? beautiful picture & now i am heading over to Rasa Malaysia...
