My favorite steak at a local restaurant is a Delmonico double cut, no bone. They get a nice crisp crust on it and the bites melt in your mouth like butter. My mouth is just watering thinking about it, just like your mouth-watering pictures - yum!

Absolutely nothing beats a good t bone on NY strip, done over flaming heat, but you MUST cover with montreal steak rub and olive oil at least 1hr before grilling. And it MUST be medium and served with mushrooms and sweet onions cooked till soft in butter and pepper.

I only like well-done steak,preferably slow cooked...

Although I like a nice ribeye steak from what I found a great steak doesn't need much seasoning at all. Just some salt and pepper and all the flavor will come from the meat.

I like mine medium-rare, usually fillet Mignon. We switched to bison mostly though and the cut we get now in our store is sirloin (as fillets are not available) and that's great too and for bison it almost has to be medium rare.
