It's all...Cook-up rice is a very customizable dish. It's all about personal taste or preference. I've used left over ham (whenever we baked whole ham shank), turkey, ham hocks (smoked pork legs -- which must be boiled first until tender), left over corned beef (not the canned kind)... the meat choices are endless. The choice of peas are also endless. I've tried yellow split peas, black eye peas, gandules, and red kidney beans. While thyme is a must (fresh or dried -- at least for me), I've never tried sweet basil. I have used bay leaves (2 bay leaves) to enhance the aroma of the dish. Those who have not tried this dish... you need to do it at least once :) I continue to experiment with different ingredients (Cyn, thank you for the tripe ideas.. I love tripe. Honey comb tripe should work well. Yes, it is a cholesterol nightmare but everything is in moderation LOL). I wonder if deep fried TOFU and button mushrooms can be used for the vegetarian kind (in lieu of the meats).
