I've just learned that nightshade vegetables can increase inflammation and pain, so I'm not going to eat any for a while. It is truly appreciated.

I've noticed in these parts we generally don't salt them, what I have seen is that they'd be sliced and put in water and squeezed dry to take out the many seeds. I don't know if the varieties we get here are not bitter or because we cook it to death in some spicy way that the bitterness is not detected. :)

Swapna - your family definitely likes baingan huh? Yes, do try stuffing it with garlic before roasting.

Veronica - You should!

Jaden - I should have known that you'd say that. I have never heard of an eggplant being called those things that you called it - bolangers or bigan.

I feel just the way you do, in some things I hate the idea of eggplant and in some things I like it.

But there is one thing I almost always do, now, when I use an eggplant...even the small ones. Instead of salting them and leaving them to stand, I peel the skin. I find THAT the bitterest part. Also they cook down better and get softer and slightly mushy (in a good way) when you peel them.

The biganee sounds really good.Suehttp://www.blogger.com/profile/02284023935180677683noreply@blogger.comtag:blogger.com,1999:blog-2019364330275165959.post-80889443758353155522007-09-19T22:33:00.000-04:002007-09-19T22:33:00.000-04:00Nice title my dear.........We often made this dish...Nice title my dear.........We often made this dish in winter with Jawar Rotal.
