The mauby is fine - sweet enough. I did add too much ice and so it melted and diluted the glass I had last night.

I just strained off the mauby, it's now in the fridge. It tastes good. Propably needs a little more sugar but that could be because I put too much ice in the glass I just had. Will wait until it is completely chilled overnight to taste again.

Update. I've just finished doing another brew and adding the reserved bark-spiced water. Remember it is a process that has to be done twice.<BR/>As I opened the container I could smell the ripening mauby. I tasted it also to ensure that it had the right amount of sweetness and that it was not too strong and bitter.<BR/>The 48 hours will be completed later this afternoon and then this evening, I

It is not quite 24 hours yet but I did the first set of brewing adding some of the reserved bark-spiced water.<BR/>At this stage it has a sugar-water sort of smell with the hint of the bark and spices.<BR/>I noticed this time that the concentrate had a deeper, richer brown colour than the concentrate I made the first time I tried it last month.
