We take our condiments as seriously as we take the food itself. Sour, pepper sauce and achar of various varieties are made at home and available widely for sale. Achar and Pepper sauce are always available at meal time. Jars, bottles and containers of these spicy, hot, tart, condiments have a place of prominence on kitchen counters and dining tables.
