Here's the final soup in my hearty Caribbean soup series - Cow-heel Soup. Rich, thick and totally satisfying. Get the recipe here.

If you are living in Guyana and read this blog or have relatives and friends there. Please share with them the following information:
- I am going to be signing books at Austin's Book Services on Saturday, Feb 19 from 10.30 a.m. to 1 p.m.
- On Sunday, Feb 20 at Herdmanston Lodge there will be a book launch/breakfast starting at 10 a.m.
I'll try to take as many photographs as I can to share with you all.

I'm around...just being terrible about leaving comments...but this soup MUST be commented on.
You have no idea how exotic this soup sounds to us Yankees. I'm thinking any long-cooking piece of beef could be substituted, couldn't it? I also think it's really interesting that the dumplings that you're putting in the soup have cinnamon and nutmeg in them. That's wild, really. You have SO opened my eyes up to a fascinating cuisine...and, boy, do I wish I could be at your book signing! :-(

I must confess ochro in soup is not my favourite add in but still doesn't detract from the fact that this is a favourite of mine.

I've made this soup using Cynthia's recipe. It's delicious and hearty. My whole family enjoys this soup. Perfect for cold weather.

Thank you, thank you!! I have about 2 lbs of cowfoot leftover from xmas in the freezer and I've wanted to make soup but wanted a really good recipe, I think I've found it!!! Will be making this soon and good luck on your book signing, I really wish I was in Guyana to attend.
I've never heard of Cow Heel Soup.
But it certainly looks delicious and hearty—and with an unforgettable name to boot!
