Disappointed by Cornbread

I could not believe it - the cornbread did not taste good! Sure, it looked gorgeous; it had beguiled me with its golden beauty. I had been impatiently waiting for it to cool just a little so that I could cut into it. But when I did, and when I took the first bite, I was disappointed. I tried recipes from two well-known chefs and was not satisfied with the taste. The recipes did not satisfy my taste. Find out why and share a recipe that you think will hit the spot.

That is a bummer! Bad tasting cornbread is very annoying. A pity because it looks so good.

I haven't made homemade cornbread in a while but have a goof recipe I'll have to dig out for you.

Your corn bread seems to be one of those local breads that varies from hose to house. A bit like our wheaten bread. You will never find two recipes the same. It is so disappointing when you can't get things just the way you want them. I suppose you could not contact the hosts to get the recipe used? I made cornbread once. It's one of those things I wanted to like as it looks so good in the recipes. I, like you, was disappointed. I think you are right it maybe needs sweetness. It looks just gorgeous. It really does. x

hey cynthia ..those links were for some sweet cornbread..they r from tasty kitchen..do hva look they hva wide range there..i think u cud follow the recipe n jus include some bacon in it as well..hp u hv luck ..
i made cornbread kinda cake from cornflour instead of cornmeal n got a rubbery flat disc...but urs looks gorgeous..u really r a perfectionist

My dear, you should have heard the cornbread wars at my house growing up! It is indeed one of those cultural Southern phenomenon - my Mom grew up forty-five minutes from New Orleans and my Dad grew up in Northern Florida, and even that close together, there were differences in the cornbread - Dad insists that Mom's is too dry (more cornmeal than flour), Mom insists Dad's is slightly gummy (more flour than meal) - both argue over sugar content, etc. etc. etc. ...The kids, of course, won by getting to have plenty of cornbread either way. :)

I've found one favorite recipe of cornbread and didn't bother to try the other ever since..Thanks anyway for your visit to my blog and such a nice comment on my Jamaican curry..:)

It seems like some people swear by sweet cornbread and some like theirs not sweet. I'm one that likes it sweet - so I can see why you were disappointed!

We are our own worst critics, really. I don't enjoy the food I prepare nearly as much as everyone else.

I think the newspaper messed up a bit with the registration...it showed a little green-ish, no wonder my mother was confused.

:-( and here I am contemplating making the corn cake I had been craving for so long; sweet and spicy and full of cilantro. Yours looks so perfect, what a pity it did not taste good. I did not think that a corn bread could go wrong.. LOL now I am a teensy bit scared to try.

i love cornbread that's a little more savoury, so I would have probably liked your low-sugar versions :-) I've used variations on some I got years ago from All recipes, like this one http://allrecipes.com/Recipe/Mexican-Style-Cornbread/Detail.aspx

My sister made one last week from the Naparima Girls cookbook and it was nice - onions, cheese and a hint of sweet. I find cornbread to be forgiving (once it's moist enough) and you can make it to your own taste.
