A Tale: Two Ears of Roasted Corn

Last weekend was the first time I had ever eaten roasted corn. Sure, I've had corn in many other ways - as a pie, steamed, boiled, in breads, salads etc. but never roasted. And so I set out to have roasted corn, hence the tale of Two Ears of Roasted Corn. Two very different ears of roasted corn which I encourage to read about in this week's column. Have you ever had roasted corn?

Roast corn is a well-known street food in Barbados.

Aluminum foil should be your best friend, here. Truly. The corn is not supposed to meet the flame, I don't think.

We love roasted corn here in India and it is almost synonymous with rains and street food........the vendors roast it over red hot charcoal , while at home it is done directly over flame .... rubbed with lime juice and salt n pepper it is heavenly....
Childhood memories...my grandparents grew corn so boy do I know roasted corn. Haven't had it much lately tho.
I ate roasted corn for the first time at a BBQ here in NYC--first the ears of corn were soaked in water or milk overnight-then using charcoal they are placed on a metal tray and roasted on top. This is also a childhood memory of mine. the ears of corn were roasted right on top of the coals. you just wiped it off, and ate it like that sprinkled with some butter and salt. yummy.
I have fresh corn mostly in summer since I came to Canada :)
While in Indonesia, almost every weekend , we could go for grilled corns on the road. We enjoyed them with butter/margarine with Indonesian hot sauce :) Weird combo!
Mmmmm.... this makes me think of two methods you might like. Pablo likes to put it on the grill until just barely colored, then we put butter mixed with lime zest, lime juice and chipotle in adobo (canned) on it. Also love it cut off the cob and sauteed in a bit of browned butter and tons of fresh thyme. Yummmm!!
And I totally would have eaten it for breakfast with you ;-)
ahhh, corn is also sold in roadside stands in Trinidad - either roasted on the coal pot (my childhood fave despite it being a workout as you say!) or boiled in pots with lots of green seasoning (not sure if they still use coconut milk on the road!)
roasted corn is a popular street food in the colder climates of India. Growing up, we'd spend summers in the mountains in India. Grilled corn rubbed with chili powder and lime juice was always a treat to look forward to.

I like my corn plain or with butter-a bit of lime juice and since I did not have cayenne--I used smoky paprika--yum combination.

This is the best way to have corn. We add some chilli powder, lime and salt to it!! we get it in street side shops in India!

I've roasted corn on the barbecue before, but never on my stove top. Now I can't figure out why!!
When I roast it on the BBQ, I leave it in the husk. Tastes yummy!

It is interesting that you wrote about roasted corn because I had some corn off of the grill this past weekend and for the first time enjoyed every bite. I usually shy away from corn on the cob because it is not the neatest food to eat in public hehe. Anyway, I love how dark your corn is roasted.
I love your tale of the corn roasting guy. And the corn looks soooo awesome. If cooking corn on the grill is the same as roasting it, I love cooking it like that. A little lime juice and cumin are awesome and so is butter or oil, but it really doesn't need that.

Very unusual way of roasting corn, love it... I do that to bread rolls when they are not too fresh any more ;)
So mane memories from back home and the street side vendors selling corn in basket and roasting them in clay ovens. we spent hours chit chatting while enjoying the corns with friends, lime and salt.
at home, i roast mine on the flame too :-)thank god i have a gas stove.
