A fish-egg frittata and a non-dairy bread pudding that will make you think of Christmas cake are recipes I'm sure will enthral and delight you. And, if you're looking for a rice dish that you'd feel satisfied eating by itself, as a meal, then a bowl Lemon Rice will hit the spot. Read this week's column to find out how I came up with the idea for the fish-egg frittata and non-dairy bread pudding. Fish eggs are so pretty... like tapioca bubbles. (You can tell I've never eaten either one.) I look forward to trying out that nondairy bread pud!

I remeber my mom eating fish eggs, we keds kept miles aways from them.

I tasted caviar and I was quite underwhelmed, though it was fascinating to have each little globule explode in your mouth. Don't think I would try it again, but the fish eggs you have here look much bigger, are they? They also look nice in the frittata piece too.

The bread pudding sounds nice. What does the baking do to the bread, considering that you're not using any binding ingredients such as egg or extra flour which need to be cooked? Does it kind of integrate the chopped pieces together - I ask because I don't bake much.

I love the look of that rice! actually all of it looks delicious (except the fish eggs I have to admit - although they do look very pretty!)

Where did you get fish eggs? What kind of Roe is it? You seem to have access to such unusual ingredients in Barbados. I must confess that I am not fond of roe but I am curious as to how it would taste in a frittata.

I can't quite get my mind around what a cooked fish-egg would taste like. I mean, I've done the Sushi thing - with salmon eggs (soft, squishy) and with tobiko / flying-fish eggs (hard, explosive) ... but ... what does cooking do to the texture?

Oh my! I have never been a big fan of fish eggs: I don't like the feel of them popping in my mouth. Or are you just supposed to let them slide down? Sort of like eating raw oysters?
